21 Day Fix: Day Eight & Nine

 Day 8 and 9 of the 21 Day Fix.

The original goal was to blog daily about this round of 21 Day Fix, but that may have been a rather ambitious goal. I spent this weekend (day 6 & 7) doing homework and did not track containers or stick to eating plan. On Saturday, I did manage to get a workout in.   

On Monday, I tracked my containers and worked out. It was kind of an off day as we went out to lunch. 

Today was a much better day. Started with a great breakfast of Fixate Vegetable Egg Cups and a side of strawberries. Lunch was a new recipe from Fixate, the Spring Salad. I paired it with two hard-boiled eggs. Had a mid-afternoon snack of Chocolate Shakeology, Orange, and Trader Joe's Truffle Marcona Almonds. Dinner was Salad, Baked Chicken and Pasta. Dessert was a Chobani Key Lime Crumble Flip Greek Yogurt.

BREAKFAST

LUNCH

Fixate Spring Salad, 2 hard boiled Eggs, and Le Croix. 


FIXATE SPRING SALAD from BeachBody On Demand's Fixate Cooking Show. 

Serves: 4 (approx 1 1/2 cups each).

Container Equivalents: 1 Green 1/2 Purple and 1 Teaspoon

SALAD:

2 cups sugar snap peas, sliced thin
1 cup radishes, cut into quarters (approx. 1 bunch)
1 cup chopped cucumber (approx. 2/3 medium)
1 cup Orange Segments (approx. 2/3 medium)
1 cup strawberries, quartered
1/2 cup torn mint leaves

DRESSING:

1/2 cup reduced-fat (2%) plain Greek Yogurt
1 Tbsp fresh lemon juice
1 Tbsp finely grated orange peel (orange zest)
1 Tbsp olive oil
1 Tbsp chopped fresh dill weed
1 tsp raw honey
1/4 tsp sea salt (or Himalayan salt)
1/4 tsp black pepper

1. Combine yogurt, lemon juice, orange peel, oil, dill, honey, salt, and pepper in a large bowl; whisk to blend.

2. Add snap peas, radishes, cucumber, orange segments, strawberries, and mint leaves; toss gently to blend. 


Dinner tonight was wonderful! Had a salad of Spinach, Cucumber, Tomato, Chia Seeds, and Parmesan Cheese with Blue Cheese Dressing. Baked Chicken with Trader Joe's Everything But the Bagel Seasoning (highly recommend, it's so good!) and Penne Pasta with a touch of butter.
