21 Day Fix: Day Eleven

 Day Eleven Round One of 21 Day Fix

Day 11 was a pretty good day overall, except for the pizza at dinner. But on a positive note, my sweetie and I walked the mile to the pizza place and back.

BREAKFAST

MID-MORNING SNACK

Sugar Snap Peas and a mix of Sunflower and Pumpkin Seeds.

Fixate Spring Salad with chopped Chicken Breast. 


FIXATE SPRING SALAD from BeachBody On Demand's Fixate Cooking Show. 

Serves: 4 (approx 1 1/2 cups each).

Container Equivalents: 1 Green 1/2 Purple and 1 Teaspoon

DRESSING:

1/2 cup reduced-fat (2%) plain Greek Yogurt
1 Tbsp fresh lemon juice
1 Tbsp finely grated orange peel (orange zest)
1 Tbsp olive oil
1 Tbsp chopped fresh dill weed
1 tsp raw honey
1/4 tsp sea salt (or Himalayan salt)
1/4 tsp black pepper

SALAD:

2 cups sugar snap peas, sliced thin
1 cup radishes, cut into quarters (approx. 1 bunch)
1 cup chopped cucumber (approx. 2/3 medium)
1 cup Orange Segments (approx. 2/3 medium)
1 cup strawberries, quartered
1/2 cup torn mint leaves

1. Combine yogurt, lemon juice, orange peel, oil, dill, honey, salt, and pepper in a large bowl; whisk to blend.

2. Add snap peas, radishes, cucumber, orange segments, strawberries, and mint leaves; toss gently to blend.

1/2 of a 12 inch Pepperoni, Pepper, and Mushroom PIzza. Split a Greek Salad with my sweetie.
