21 Day Fix: Day Three

Day Three of my 21 Day Fix journey. 

Today was not the best eating day. As much as I love Smoothie King smoothies (love the flavor and texture) having it for breakfast sets me up for failure for the rest of the day.

I ended up eating a mid-morning snack, which is not the of the world. I do believe that one should eat when hungry, the problem is I was hungry all day. I got into the candy dish at work and ate too much chocolate.

I wolfed down my mid-afternoon snack of Chocolate Shakeology and Orange.

Did not workout today upon arriving at home as I was exhausted and hungry. Although, did get laundry done.

For dinner, I was craving pizza like a mad woman!!! I stopped at Trader Joe's to pick up a Cauliflower Pizza Crust so I could make Pepperoni Pizza. I was trying to make it somewhat healthy! It wasn't all that great. In fact, it was really disappointing. Then I ate Wheat Thins even though I didn't have any more yellow containers. 

Overall, I was short on my vegetables and fruits, while overdoing the carbs and fats. On the positive side, I did drink a lot of water today. :)



Smoothie King's Original High Protein, 20 oz, Chocolate Smoothie. I requested no dates, swapped the milk for almond milk, added spinach and fiber enhancer. Of course, can't forget coffee with Half and Half. 



Fixate Chinese Orange Sauce, Chicken Breast, Mixed Vegetables, and Brown Rice. Le Croix. 


Serves: 8 (approx 2 Tbsp each)

Container Equivalents: 1/2 Yellow

1 Tbsp rice vinegar
2 Tbsp coconut sugar
3/4 cup low-sodium organic vegetable broth
1/2 cup 100% orange juice
2 Tbsp reduced-sodium tamari soy sauce
1 Tbsp orange marmalade
1/2 tsp garlic powder
1/2 tsp ground ginger
1 pinch ground cayenne pepper (optional)
1 Tbsp cornstarch + 1 Tbsp water (combine to make a slurry)
1/2 tsp sesame oil

1. Heat vinegar and sugar in small saucepan over medium-high heat. Bring to a gentle oil; gently boil, stirring constantly, for 1 to 2 minutes, or until sugar caramelizes and forms a thick syrup. 

2. Add broth, orange juice, soy sauce, marmalade, garlic powder, ginger, and cayenne pepper (if desired). Bring to a boil. Reduce heat to medium-low; gently boil for 15 minutes to reduce sauce. 

3. Add cornstarch slurry. Whisk to blend; gently boil for 1 minute, or until sauce thickens. Remove from heat. 

4. Add oil, mix well. 



Chocolate Shakeology mixed with water and a side of Orange.



Trader Joe's Cauliflower Crust, Turkey Pepperoni, Sugar Free Pizza Sauce, and shredded Mozzerella Cheese.
