21 Day Fix: Day Two

 Day Two of my 21 Day Fix journey. 

Today was a great day, eating and exercise wise. Today, I completed 21 Day Fix: Upper Fix, followed by Country Heat: Down and Dirty. My energy started to fail toward the end of Country Heat but managed to finish. I'm just getting over a cold and still have a slight cough, so my lungs aren't quite back to normal but they are slowly getting there.

BREAKFAST

1 slice of multi-grain bread, 1 tsp of almond butter, 1 medium banana, 2 fried eggs, and water.

LUNCH

4 oz of baked chicken breast, 1 cup mixed vegetables, 2 Tbsp Orange-Stir Fry Sauce, 3/4 cup brown rice, and 12 oz can of Le Croix Sparkling Water. 


FIXATE ORANGE STIR-FRY SAUCE

Serves: 8 (approx 2 Tbsp each)

Container Equivalents: 1/2 Yellow

1 Tbsp rice vinegar
2 Tbsp coconut sugar
3/4 cup low-sodium organic vegetable broth
1/2 cup 100% orange juice
2 Tbsp reduced-sodium tamari soy sauce
1 Tbsp orange marmalade
1/2 tsp garlic powder
1/2 tsp ground ginger
1 pinch ground cayenne pepper (optional)
1 Tbsp cornstarch + 1 Tbsp water (combine to make a slurry)
1/2 tsp sesame oil

1. Heat vinegar and sugar in small saucepan over medium-high heat. Bring to a gentle oil; gently boil, stirring constantly, for 1 to 2 minutes, or until sugar caramelizes and forms a thick syrup. 

2. Add broth, orange juice, soy sauce, marmalade, garlic powder, ginger, and cayenne pepper (if desired). Bring to a boil. Reduce heat to medium-low; gently boil for 15 minutes to reduce sauce. 

3. Add cornstarch slurry. Whisk to blend; gently boil for 1 minute, or until sauce thickens. Remove from heat. 

4. Add oil, mix well.

Chocolate Shakeology and 1 Orange. I also had a handful of Marcona Truffle Almonds.

Fixate Almond Crusted Chicken and Salad (spinach, cucumber, celery, tomato, shredded carrots, chia seeds, parmesan cheese, and Asian Sesame Dressing).
